Is your heat sink the little aluminum fin that comes with the Pi? You're going to want to get some sort of active fan cooling for the CPU. I would suggest the latest Ubuntu headless version. A 32bit os won't give you access to all of your ram. You're going to need an external SSD and possibly an external powered USB hub. Keep in mind that a Pi server will definitely be more expensive in time and money to do properly. How long is a tough question that no one can really answer.There is no limit to the amount of customization you can do on your Pi.That'll depend on your connection speed and what else you have going on in world. I run a velocity proxy and 3 different servers all on Pi's with SQL databases interlinking the servers for portals and inventory. If you are willing to learn, put in the time and effort to properly configure your server then it's absolutely possible. If you are just looking for a quick fix server plug and play like most of the people who answered here already then a Pi server isn't for you.
